Traditional Greek Tiropita recipe: 1 package filo dough Extra virgin olive oil or butter 2 large scoops ricotta cheese 1 block feta cheese 2 eggs Pepper Sesame seeds Honey (to serve) Mix eggs and ricotta in a medium mixing bowl, then crumble feta block and pepper and combine. Lay out filo dough horizontally, then generously brush each sheet with olive oil or melted butter. Once moist, stack a handful of sheets and cut up and down into wide strips (about 4). Add a heaping tablespoon of cheese filling mixture onto the bottom of the sliced, stacked dough, then fold the bottom corner of the dough across until it touches the opposite edge (forming a triangle). Continue rolling and folding dough until it reaches the top of the strip and forms a triangle. Place onto a baking sheet and brush the tops with more oil. Bake at 375 until golden brown (about 20 minutes), then sprinkle with sesame seeds and serve with a fresh honey drizzle.
